Introducing the Simon Hotel’s third fine dining restaurant, starred chef Marcel Ravin’s signature restaurant, La Table de Marcel. Chef Ravin, now a resident of Monaco, is on home ground in Martinique and as such, is perfectly at ease showcasing the island’s treasures he knows so well. Leading the kitchen is young chef Lindley Lanappe, originally from Mauritius. Together the pair transform their ideas into a flavoursome mix of the island’s tastes and scents. With Marcel Ravin at the helm, there’s no question of cutting corners when it comes to produce; every supplier is known and verified. The vegetables are sourced from the Man Viviane garden, with crayfish sourced from André Mantangal, a crayfish farmer on the river Carbet. Nothing is left to chance in this kitchen. Let’s draw on the experience offered by this beautiful restaurant by starting with the signature Monte-Carlo Egg, served with cassava, maracuya truffle and djoi polis; followed by the catch of the day, sea-caught fish served with a bouillabaisse emulsion and root vegetable aioli, or even a select piece of local smoked beef served with breadfruit dauphine and a cnicus béarnaise. To finish, indulge in la noix de coco de Marcel, a dish inspired by Marcel’s childhood desserts and successfully recreated by Lindley Lanappe.
